Safe Recipe Request Potatoes in broth?

Mostly just a question of is it ok to can potatoes per the usda guide using broth instead of water?

I’d love to dump out a jar, add some flour and butter and have potatoes in gravy

The ball book on Canning has three recipes for potatoes in broth, one that actually taste fantastic is herb potatoes. I don’t have the recipe in front of me, but it’s basically cubed potatoes and chicken stock with a couple of different dried herbs. Another is a Mediterranean with mostly potatoes and mushrooms in chicken stock. You’ll have to get a hold of the book and look it up, but I know that they’re all fantastic and you can just open them and put them in a skillet to fry them or add them into other recipes

As I recall, the Ball Book allows for broth but is raw pack and fewer potatoes per jar - May even have different directions for process.

So - LOL - it’s early bear with me - to answer your question, no. Not as per the NCHFP recipe but I think Ball has a tested one if you want me to try to find it.

I’ve heard the ball recipe is very specific on weight of potatoes. I can always just use the soup recipe and only fill jars halfway with potato and use broth, that is considered safe per the soup recipe in the usda guide.

Thank you for the input though!
