I don't understand why some PTs make overweight people do explosive movements like box jumping or running. If a person is overweight, the tendons and joints are already overstressed, and doing explosive movements just increases the risk for injury.

Because it’s CrossFit and the main goal is injury

This doesn't look like she's in a class or anything just posting for social media. Probably should start there.

She is literally training snatch and C&J. While it's true that being obese does nothing good for your health, I don't think that box jumps are worse for the tendons than cleans.

Bro what? Any high impact landing is hard on your joints. Jump squats deliver the same amount of force because it's directly correlated to your weight bearing down when you land. And also, if she's training only for cleans, there's no point to doing box jumps. I've never in my life seen someone recommend plyo as a supplement exercise with lifting unless they're an athlete training for a sport. For the average person, box jumps benefit runners or endurance trainers the most, not crossfitters.

She is not only training for clean but cleans are part of her snatch and C&J training for competition. And you think you don’t have a high impact landing during a clean? During a box jump your impact landing on top of the box is pretty low as you are near the peak of your jump, during a clean you come down with your body weight and the weight from your bar.

Box jumps in itself are not the issue here. General lack of safety mentality in CrossFit? Definitely. She should have been taught that you don’t jump on something that might roll away.
