I have a lot of experience with putting too much on a pizza. There is definitely a tipping point where all the toppings keep the pizza from cooking correctly. This one is getting very close.

It definitely depends on the dough as well. Chicago tavern style pizza is almost a cracker and could probably take this kind of topping load. I haven't heard of Wisconsin tavern, but it might be similar

It takes 30 minutes to cook in a 650 degree oven and the mushrooms are on top so they can steam off their moisture without soggying up the crust

That honestly doesn’t even sound like pizza. 30 minutes at 650 is insane. It’s like 10x longer than you’re supposed to cook a typical pizza.

Yeah, this feels like that Ian Malcolm quote: "Your scientists were so preoccupied with whether or not they could that they didn't stop to think if they should." Like, if OP is happy with it and it's actually cooked properly, great. But I just can't see how it could be cooked properly with that many mushrooms. Doesn't work for me at all.

This is the standard for this pizza. It’s the pats special. Comes with double mushrooms and double sausage, and two toppings of your choice. And onions are freebies if you so desire.

When the mushrooms are on top and it’s a 30 minute bake at 650, the moisture from the mushrooms steams off into the air not into the pizza

Most mushroom pizza has slimy canned mushrooms or super dry mushrooms they put on raw.
I very rarely see mushrooms on pizza cooked properly.

It is NOT a local Wisconsin brand. It was created in Missouri and the main bottling facility was in Gastonia, NC until 2016.

This reminds me of one of the best pizzas ive gotten. Place had free toppings with no maximum so you know for a fact I put every topping down. Truly an everything pizza.
When it got delivered that thing had at least an inch tall pile of various meats and vegetables on there. A Glorious pizzia

No, not soggy. It’s tavern style crust, which is essentially a cracker. It’s baked for half hour in a 650 degree oven and the mushrooms are shaved thin and placed on top of everything else so the moisture evaporates into the air. Plus it’s got double sausage on the bottom layer, that gets put on raw, so the crust gets even crispier from all the pork fat that comes out of the sausage. It’s the founders signature pizza and they’ve been open 70 years, they’ve got it figured out. I worked there about 20 years ago early in my career.

Incorrect. Cracker style tavern crust baked at 650 for half hour with mushrooms on top so the steam evaporates off the mushrooms. It wouldn’t have survived as their signature pizza for the last 70 years if it were a soggy mess.

I ate a 12oz box of mushrooms as my side with dinner tonight.
Just sautéed in butter, little thyme and garlic close to the end.

It’s crispy. It bakes for half hour in a very hot oven and the first topping they put on is sausage (raw) so the grease from it really helps crisp it up. It’s been their signature pizza for 70 years. It wouldn’t be so popular if it was a soggy mess. I worked there for a bit about 20 years ago.
