Perhaps I should clarify. I am the restaurant manager and have never seen this in my 15 years. This sticker is not used by McDonald’s.

I just asked my husband who is a McDonald’s manager also out of curiosity of you saying 15yrs+ without seeing it. He has never seen it and doesn’t know either. Maybe a second hand chiller and they didn’t bother to remove previous stores labelling?

Question, do your employees unload the trucks and store the product; or does the driver do it? I could see this as a color coded system which drivers might use to figure out where various products needs to go. Likely as part of a "transition" from one system to another one.
So, for example, a box that previously used the green JY code, would now use a white circle on green, and so on.

RT = Room Temperature CF = Cold Fermentation.
Cold fermentation simply means lowering the temperature during the first or second rise of a dough.

I believe it's a reference for locations in the chiller for organising and avoid cross contamination

In a McDonald's walk-in chill box, this label is probably part of a color-coded system to help staff quickly identify and manage inventory. McDonald's is known for its highly efficient operations, and such systems ensure that food safety standards are met (e.g., FIFO—First In, First Out—for stock rotation) and that staff can find items quickly during busy shifts. The colors (green, yellow, black) might represent a progression:
- Green: Fresh or ready-to-use items (e.g., vegetables, sauces).
- Yellow: Items needing attention or to be used soon (e.g., prepped ingredients).
- Black: Frozen or long-term storage items (e.g., patties, fries).
The symbols (circle, square, triangle) might further differentiate the type of item or its state (fresh, prepped, frozen), while the letters (JY, RT, CF) likely specify the exact product or category.
