If they're cannibalistic doesn't that mean they'd eat each other therefore humans are safe? I think you may have found a cure to a zombie or vampire outbreak. Assuming that the contagion is spread through fluid contact and not airborne. We'd just have to keep out of their way as they hunt each other.
Airborne vector for vampirism. Saliva or other blood vector for cannibalism. However both parties could possibly contract zombieism through copulation.
1). Vampires
So everybody starts turning into a vampire since you don't even need to get bit to become one. Then as a human population starts running low and the vampires realize their food source is running out, are in turn forced to come up with a cure for vampirism to preserve their food supply or risk starving to death. Then once they succeed they begin to develop human farms where humans are bred for their blood production and blood quality capability. Thus vampire civilization takes over and human live as cattle.
2). Cannibals
Saliva for cannibalism seems like a non issue for the most part. Do they need human flesh to survive? Like if you basically have to get bit to catch it unless said cannibals are actively bite living people it won't be spreading much right? Apart from wanting to eat human flesh cannibals are pretty normal compared to vampire through zombies no super abilities or brain dead to the point of single mindedness. So in the interest of self-preservation cannibals would have to find a way to live peacefully with society. Or be caught and punished however this society would deal with it. If they're fairly normal apart from the cannibalism there might be a chance that they could petition the government (unlikely) to donate cadavers to the few cannibals that choose to live peacefully and that don't resort to killing or actively spreading their cannibalism.
3).Zombies
Who TF is screwing a zombie hahaha. You set a very fun quandary though it seems that the only people that become a zombie need to fill 2 two very strange criteria. They have to want to screw zombie and they have to be okay with being brain dead once they catch it. I guess it could also be that a a small percentage of the population carry the virus for zombism but are asymptomatic in which case you're just rolling the dice every time you sleep with somebody.

Cannibals are only really awful if they eat you while you’re alive. If they kill you then eat you, from your perspective it’s no worse than being killed by a rogue band of marauders.
