There's been no in universe reason given, but my head canon is that Varian Wrynn (or one of the Wrynn's) thought they looked cool and made them their emblem.
It's also my head canon reason as to why Stormwinds name changes from Stonewind during the time between the original Warcraft game and the MMO.
