This is adorable! I love Diamond Back terrapins ❤️ when I was a wildlife rehabber, i would get a few of these each year.

Probably a breeder and it looks like they cut the egg open, so it's not even hatching, the person hatched it.

A bird egg would crack and come apart, reptile eggs aren't like that. They are soft and flexible, tearing like paper.
Cutting eggs open is somewhat common among reptile breeders to increase the number of reptiles to sell. Usually a breeder will wait until 1 pips and cut the rest open, possibly after waiting a bit of time to see if the others do on their own.
But it is possible that the baby tore open the egg and the guy just removed a/the piece for the video.
(I used to keep and breed reptiles)
