You can do this with just a regular knife. Just make cuts into it that looks like a "v".

I cut my pineapple like this all the time, just without the extra tools. It takes time, but it tastes so much better making sure you properly get those circle bits out.

Isn't the flesh on the outer layers where those bits are kind of bitter anyway though?

Seems like it would be easier to just cut it down thinner and accept a little bit of food waste.

You waste a lot doing that. The threading goes right to the skin so it would be about a 50% loss of sweet to bitter. Probably works out to 5-7 mouthfuls. Not nothing if you ask me.
