Can't imagine why a food service worker would come into work sick.

It's not like jobs don't actually give enough sick days to cover the amount of days someone is likely to be sick. And they don't pressure people not to use said sick days when they do have sick days available. And they certainly pay enough that even missing a day unpaid won't set them on a spiral to financial ruin. And they provide health insurance. And that health insurance is actually good enough that going to the hospital is actually affordable.

It just baffles me...

You are absolutely right. They should hire twice the amount of people, and keep them at half the amount of hours each to have an adequate workforce. Cut their hours and half, and hire more people.

Wait are you saying that having 8 people own most of the nation's wealth prevents other businesses from adequately staffing and paying people?

Lots of us have been saying this since the 60s. The game monopoly pretty adequately lays out how capitalism without restraints will choke the rest of the nation into poverty.

Some of these food companies are monopolies and absolutely can afford to staff more and pay their employees more but choose not to. As for the smaller businesses.....they're one of the reasons billionairs shouldn't exist.
