HNC Kitchen Small batch recipe, makes 4 croissants
When you proof the croissants in the oven, make sure to have a large kitchen/dish towel placed underneath the tray of croissants because you don't want the tray of hot water below to melt the butter! The kitchen/dish towel will insulate/buffer the heat from the hot steam.
My croissant journey by breadmonster
Zach's croissant tips and txfarmer poolish croissant recipe He uses txfarmer poolish croissant recipe. KAF stands for King Arthur all purpose flour. If you can't get this brand of flour, get flour whose protein content is between 11.5% and 12%. It's usually bread flour. Don't get any flour below this percentage, or you'll get flat croissants.
NOTE6, some recipe would ask for some bulk rise time at room temperature. I think it's not suitable for home bakers. Bulk fermentation strengthens the dough, which means one would need to play with knead time, and rolling technique to accomadate the added dough strength. Furthermore, there are a lot of resting in my procedure because the dough would get too tight or too warm. With a bulk rise, I am risking over fermenting, which would cause the final proof and oven spring to be weak.
So DON'T ferment your dough at room temperature to double size. Have your dough wrapped in plastic wrap tightly and straight into the freezer.

How to get the inner dough better?
Proofing time according to the recipe seems rather short, "1 to 2 hours". It takes me 3 hours to proof them since my dough tends to be on the colder side.

I tried to make croissants for the 1st time...
It looks like the yeast died. I had that happen before when I put too much salt in. LOL Or when the yeast fermented too much.
For a beginner, I would make the croissants in one day. Once you're familiar with the process, you can make them in two days.
https://youtu.be/VJ6LPXxJL_w?si=UA6uYjrerp1sEuP6
In the video, it said to freeze the dough 2 hours. But you can freeze it for 1 hour and then take out and laminate. You should be able to complete the croissants about 5 or 6 hours later, depending on how long the laminating and proofing process is.

Have I been counting my croissant folds incorrectly?
I experimented with a lot of folds. LOL For me, I prefer thin sheets of flaky layers, so the folds are going to be more than 1 book fold and 1 letter fold. I like these combinations: 2 book folds and 1 half fold. Three single folds. 1 book fold, 1 single fold, and 1 half fold.
Pastry chef Scott definitely does 1 book fold and 2 single folds.
You can try 1 book fold and 1 single fold, but make sure to roll the dough out to 3.5 mm or 4 mm. Though, I did see some roll out to 5 mm but then stretch the triangles out.
I also see that some people do 2 single folds (3-3):
https://www.reddit.com/r/Breadit/comments/1fyl5li/croissants_from_today/
or 2 singles folds and half fold (3-3-2) :
