Mid-Cultivation / Still Growing Left harvested block uncared for weeks?

Okay so I harvested my first flush and didn’t want to do more, I come back weeks later to throw away and there’s mushrooms growing again? Is this good still?

Wow. Would you break it up into fresh substrate like it just came from the UB bag? I think I would.
