Cook away… I use a fireboard and it has an option to just ignore the switches which is what I do. Only issue would be if you have a habit of standing there with the hood up for extended periods.

Pork shoulder is very forgiving anyway, grill on!!!

How do you add wood/charcoal during the cook?

Glad your place didn’t burn down. My gaskets are solid, may be the slides themselves just not sure. I leave mine outside and never leave the doors open.

May have to try this next time, I’m not against the 18 hours it takes mine sometimes but shorter time with comparable results would certainly be acceptable.
