I don't think I understand what hyper armor is. I've seen videos saying the longsword helmbreaker has hyper armor so you can't be interrupted in your attack, but anytime I am touched at any part during helmbreaker I am flinched out of the attack. What is hyper armor?

Hyper armor lets you continue with an attack in exchange for chip damage, if you are hit during certain parts of the attack. Even if an attack has hyper armor, it won't be on the entire attack. Some attacks (switch axe sword mode counter) have tons of it, some attacks (IG charged descending slash) have a teeny tiny amount. I don't know about LS exactly since I don't play it, but if you want to test, go to the training area and set the knockback of the training dummy to regular, then experiment with getting hit during different times of helmbreaker and see when you're able to power through the hit
