Theres ethnically jewish and theres people who converted into judaism. Both are viewed the same (mostly) within the larger culture itself, just as there are those who are ethnically mandalorian vs foundlings or those who took up the creed akin to din djarin
Holy shit that's like the best allegory I've seen, that makes everything make perfect sense.
You can even make comparisons to sub-groups that way, like Djarin's Children of the Watch being an Ultra-Orthodx fringe group, or Boba and Jango being secular (possibly atheistic) Jews, etc.
I can say that all of the Order 66 scenes, including the music, remind me very strongly of scenes from Holocaust movies as well, without folks like George Lucas or John Williams being Jewish themselves. Art imitiates life, it's all right there waiting for us to be inspired by it.
As much as I dislike the sequels, they nailed the Empire's escalation from an already hateful, tyrannical yet cold government into something of pure extremism, hatred, and palpable vengeance. Domnhall Gleeson, Hux's actor, acted his heart out in the scenes that really concrete how evil the First Order was.

Jango Fett was a human from Concord Dawn. So, they're human. Jango was a Mandalorian, but that's not a race/species.
