General Discussion Would the Clones be considered ethnically Mandalorian, Kaminoan or something else entirely?

Jango Fett was a human from Concord Dawn. So, they're human. Jango was a Mandalorian, but that's not a race/species.

Didn't jango get shit on from other mandos for not being a "true" mandalorian? Or was that boba?

Both. Jango was a foundling and not considered a “true” Mandalorian from elitist “ethnic” Mandalorians who were Mandalorian by blood (belonging to a known house or family), not by converting.

Eh, depends on your canon. He's from Concordia in both, and considered an outsider, but the baddest Mando around, depending on what your definition of a Mando is. Politics and dogma kind of blur everything after that, but the original ARC troopers were supposedly trained by Jango himself. He also recruited bounty hunters to train the clones. It's why I found Boba so interesting for a long time, especially with the Mandalorian series. Din had Bo and Boba to contrast with and really illuminate the nuance in Mandalorian culture.
