I think this is actually close to the answer - maybe somebody WAY back when saw a Lion and nobody believed it existed and made its way into folklore, Anduin Lothar being called the Lion of Stormwind could be a reference to how legendary his status was

Reigns of the Golden King, Sambas rare, and Winged Guardian...so retconned but not in classic.

Rare and mythical so it fits. Some link unicorns if not a native creation (add a horn to a horse) to bad word of mouth about a rhino (4 hooves, horn, mammal).
