Food My new love β a lemon cake for cozy cottagecore evenings π°
Ingredients
β 2 cups cottage cheese 5β9 percent fat 500 g
β 2 large eggs approximately 100 g
β 3 to 4 tbsp sugar substitute or regular sugar 20 to 25 g I used liquid stevia 3 tbsp
β 1/2 cup thick Greek yogurt 100 g
β Zest of 1 lemon
β 2 tbsp lemon juice 30 ml
β 1/4 tsp baking soda
β 1 tsp psyllium husk
β A dash of vanilla optional
How to Make It
β Blend cottage cheese until completely smooth or press through a sieve
β In a separate bowl beat the eggs with sugar or sweetener until lightly frothy
β Add to the cheese Greek yogurt lemon zest and juice baking soda vanilla if using and psyllium husk Mix well
β Pour in the egg mixture and stir until smooth
β Let the batter sit for 10 minutes to stabilize
β Pour into a silicone baking pan 7 to 8 inches wide 17 to 20 cm and smooth the top
β Bake at 338 F or 170 C no fan for 45 to 50 minutes until golden and set in the center
β Let cool in the pan then chill in the fridge for at least 2 to 3 hours overnight is best
Nutrition per 100 g slice
β 93 kcal
β High protein
β Sugar free
β Flourless

Art I made a painting of what I love about my town
I live on Tamborine Mountain, itβs full of animals, birds, bugs, and lots of interesting plant life. My faves are the hares, bandicoots, and tawny frogmouths. Thereβs also lots of opportunities for star gazing, growing things, and there is a great creative community. This painting is also a bit whimsigoth inspired π

Home Decor This tea setup feels like something out of a rainy day storybook
I donβt even need another tea set but something about this one just feels like a cottage daydream. I can already picture the cake, a worn book, and a sleepy cat curled up somewhere nearby.

Tips for making my 80s home a cottage core retreat
The first 4 images are the inspiration, the last 5 are what we have to work with.
My plan is to plant a big cottage garden in the front and change up the paint colours. But I'm not sure how to spruce up the inside.
I'm planning on introducing some wooden items, like a wooden coffee table and a kitchen hutch which we'll use as our coffee table. But any suggestions in terms of paint or decor to warm up the place would be amazing.

My first attempt at Chinese wisteria jelly, and one jar of apple butter. These goodies will be fridge-set and enjoyed by my wife and I, and gifted to others :)
My job puts me in contact with a LOT. Of invasive Chinese wisteria, so I helped myself to a big hoodie-full of blossoms. I took them home and went the tea infusion route, and will not be canning them-- just storing in the fridge and enjoying it.
I'm going to taste test it first of course, before I go giving jars as gifts! If I get violently ill (the ONLY edible part of the wisteria is the blossoms-- the stems, seeds and leaves, which I removed, are all toxic) I will be tossing it all π
It's so pretty! And it smells delightful!
