I kind of wish this had been our ending. Taking the bullet for Tony, letting him have the life he'd built. He's been prepared to jump on that grenade since long before he became Captain America.
So instead of a quiet funeral, there's a military ceremony, with a lot of soldiers from the US, Wakanda, etc. He's being buried under a monument to honor those who fell at the battle at Avengers HQ. Maybe you get some aged-up, surviving Howling Commandos like Dougan. Steve's will bequeaths the shield to Sam, and Tony repairs it, reminding a reluctant Sam that everything special about Steve Rogers didn't come from a bottle. Maybe Bucky is the one to take the stones back to their different time periods, with one extra trip to leave a letter from Steve to Peggy.
Cap being the most obvious fit is the best reason to have Tony do it. He wasn't born to do it. He grew into his martyrdom.
For a Cap, it wouldn't be a choice but an instinct to sacrifice his life, like jumping on a "grenade" without hesitating. For Tony, it was a choice, especially since he already hinted that he wouldn't risk losing his family even if it meant saving the universe. And he made the choice.
Lastly, everyone seems to already forget how I AM IRON MAN perfectly bookmarks the 2 ends of the MCU Decade.
Also tho the ending we got proved both Cap and Ironman wrong in Avengers 1. Cap told tony he wasn't the one to lay down and make the sarcifice play and Tony told Cap everything special about you came out of a bottle but Cap being able to weild Mjölnir proved he was more then just a super soldier science experiment. I think those were great call backs that make the characters even better. Tho I too would have liked to see Cap do the snap
I definitely thought Cap was gonna die in Endgame too.
The Russos talked about this in an interview, they wanted Tony & Steve's ending to contrast their usual selves: Cap who is usually the most selfless person in the world does something selfish for once and creates an alternate timeline to live with his true love - and Tony who started out as the selfish billionaire becomes the one to do the most selfless act to save the whole universe.
It makes a lot of sense for their character arcs and at the same time subverted a lot of people's expectations that Cap was going to die and Tony was going to retire.
