Because nintendo knows that nostalgia is one hell of a drug, and countless suckers will happily pay any amount of money to play very slightly modernized versions of games they remember from childhood. Then they let their kids play those same games, and there’s another generation hooked. That‘s literally their entire business model.
Every time I see this opinion that "nintendo just releases the same games over and over" it tells me that the person clearly hasn't played any nintendo games either ever or for a very long time.
Like first of all, every version of mario kart for example, has significant enough changes that from as simple as new race tracks, changes to mechanics, additions or modifications to items, etc.
Super maro kart and mario kart 8 are worlds apart.
As is super mario brothers on NES and mario odyssey on the switch.
Sure, there are familiar characters, enemies and mechanics, like jumping on goombas, but so many changes between each iteration makes them more than the same game.
At least nintendo doesn't Nickle and dime you with microtransactions. I can trust that nintendo will make an amazing 3d platformer, a great mario kart and an epic Zelda every time.
