Look up the CNT in the Spanish Civil War for how Anarchists organise militarily. It's probably the best source for such info. The Zapatistas and the Rojava provide more modern contexts, but I am unsure how much info is available as I haven't gone looking for it.

I was part of the summit protest movement in the late 90's, early 2000's. Whilst not exactly a war zone, we organised actions across large groups pretty effectively. We turned up in our Affinity Groups, mine was a large section of my local Anarchist crew. We held planning meetings in the lead up, each affinity group would discuss what sort of actions they were up for, then when we got together in the city of the economic Summit with all the other affinity groups and held spokes-council meetings. Each affinity group assigned a delegate to speak on behalf of the group. The spokes-council was for co-ordination, it was not a decision making body per se. We worked out which groups wanted to do similar things and then met with them.

Once the protests started, we'd call spokes-councils on the fly and work out what the larger group wanted to do. People would meet, have a quick discussion, everyone would go back to their affinity group, check with them if they liked what was being planned, hear alternative ideas, and back to the spokes-council. At most it took three quick spokes-council meetings to decide what to do next. if your affinity group didn't want to participate in what was planned, that was fine. No coercion required.

China and Vietnam sure have a lot of capitalism for 'socialist states'... Do you believe that any of them are honestly working towards a classless, stateless society? Any signs that the state will wither away?
From my perspective they look like single party dictatorships where loyalty to the party is more important than loyalty to the working class. My concern with such an approach is that we'll just need a further revolution to overthrow the state, if it doesn't just revert to capitalism.
Single Party dictatorships crack down on workers movements just as hard as capitalist states even when they are protesting capitalist exploitation within the system. 'When the people are being beaten by a stick, they are not much happier if it's called 'the people's stick'.

Housing. My rent is going up faster than my income with no relief on the horizon. As a renter neither major party are going to do anything to get me out from under the crushing boot of my landlord. They offer me nothing, they get nothing. The ALP will get my preference, but they don't deserve my vote.

All the examples you listed are capitalist enterprises.

That said, refuse to trade with them, refuse to help them, give them nothing. If enough people were up for it, seize their workplace and turn it over to a group of people from the minority they were discriminating against. I'd 100% be up for storming a whites only cafe and taking it off of them at gunpoint.

Getting involved in community but have mental illness

You'd fit right in with my local comrades. We are pretty much all neuro-divergent, some with complex mental illness. There's a lot of ways to help too. From experience, I suggest you try to go along to something and talking with people involved in your area. You can suss them out pretty quickly and see if they are cool with you. Most activists would be happy for the help in any form you can give.

Australia doesn't have anything directly comparable to the Zapatistas. There's a lot of militant indigenous activists that do cool shit though. To get a bit of history you should look up the Aboriginal Tent Embassy that has existed around the parliament house. Tent embassies have been used in other locations as well, I was involved with one at Sandon Point (on Dharawal land) in the early 2000s (sadly there isn't much info easily accessible), there have been multiple tent embassies on Gadigal land (Sydney). I was going to recommend looking up Sovereign Union, but their website was looking pretty broken when I checked.
The Bougainville Revolutionary Army and their struggle for independence from Papua New Guinea would be of interest to you.
